Making the dough #bakery #dough

Not what we imagine,
nothing so pretty,
our expectation,
what is your image,
when I say the word bakery,
what comes to mind?
 
Making the dough,
in batches of 300 pounds,
for rolls, 500 for bread,
a giant mixer on its side,
doors opening like lips.
 
A coal-car, a trough,
rolling across the floor,
a shoot, gravity, the weight,
pulling the dough downward,
into the maw of the machine
above the floor below.

after my first year of college.
I worked 14 weeks on the roll oven
